I’m so glad you opened this recipe! This cake is made from BLACK BEANS. Yes, that’s right, I said black beans. Don’t turn your nose up at this until you try it. You will be surprised and delighted to know you cannot taste the black beans at all. It’s a super simple recipe and it tastes delicious. I have been trying to find healthy alternatives to delicious sweets. I hope you give this a try!
1 (15.5 ounce) Can of Black beans, rinsed and drained
1/2 Cup apple sauce (unsweetened or home made, I used home made cinnamon apple sauce)
1/3 Cup cocoa powder
1/8 tsp salt
1 tsp baking powder
1 tsp vanilla extract
1 tsp almond extract
3/4 Cup sugar
3 TBS strong/bold coffee (just take a few tbs out of your coffee cup in the morning and set aside)
1. Preheat oven to 350 degrees F. Lightly grease/parchment line a 8×8 or a round cake pan
2. Combine black beans, eggs, apple sauce, cocoa powder, salt, baking powder, vanilla, almond, sugar and coffee. Combine all of these in a blender. Mix until smooth. (I used the puree setting on my blender)
3. Pour into your prepared pan
4. Bake for 30 minutes or until the top is dry to touch and edges start to pull away from the side of pan.
Remove from oven and let cool.
Frost or just dust with powdered sugar 🙂
