Cold Quinoa Salad

Quinoa can be a bit bland if you don’t prepare it in a colorful way 🙂
Here is my recipe for a delicious quinoa salad that can be easily doubled and served for many! It’s also very versatile, you can add whatever you want and omit anything you don’t like 🙂

ingredients:

3 Cups of cooked Quinoa (cook according to package directions 1 cup of dried is 3 cups cooked)*

1 Red Pepper, chopped

1 Green Bell Pepper, chopped

1 Small White Onion, chopped

1 Orange Pepper, chopped

2 Stalks Celery, chopped

2 Carrots Peeled and chopped

2 TBS Extra Virgin Olive Oil

2 TBS Light balsamic vinegar

1 TSP Salt

1 TSP black pepper

1 TBS fresh basil

1/2 TSP dried parsley

1/2 TSP garlic powder

Directions:

Cook quinoa as per directions on the packaging. Set aside in a large bowl.

Chop all of your vegetables and put in the large bowl with quinoa

In a small bowl add oil, vinegar and spices whisk and pour over the quinoa and vegetables mix well and refrigerate.

Serve cold!
