12 Days of Christmas Cookies: Italian Meatball Cookies

I forgot to snap a photo of my cookies but I found this photo on Google and these are exactly what mine look like!!!

While these sound interesting, they are FANTASTIC. It’s a chocolate cookie dusted with powdered sugar. I’m  not sure where this recipe originated from but it is my favorite meatball cookie.

Ingredients:

3 Cups Bob’s Red Mill All Purpose GF Flour

2/3 Cup Unsweetened Coco Powder

1 1/2 TSP baking powder

1 1/2 TSP Baking Soda

1 TSP xanthan gum

1 TSP salt

1 TSP ground cloves

1 TSP ground all spice

1 TSP ground cinnamon

1/4 TSP ground nutmeg

1/8 TSP ground ginger

1 1/2 Cup granulated sugar

3 eggs

1/2 Cup softened butter

2 TSP vanilla extract

1/2 Cup powdered sugar (dusting cookies)

(or chocolate glaze)**

Directions:

Preheat oven to 375 degrees

Combine in a large bowl: Flour, coco powder, baking soda, baking powder, salt, xanthan gum and all spices. Set aside

In a stand mixer cream butter and sugar, add one egg in at a time. Combine until smooth add vanilla.

Slowly combine flour mixture to butter, sugar, egg and vanilla.

Refrigerate, covered for 15 minutes.

Roll into 1 inch balls.

Bake 10-12 minutes.

Dust with powdered sugar

** Chocolate Glaze**

1/2 C coco powder

2 C confectionary sugar

1 TSP vanilla

2 TBS milk

Stir all together and dip on top of cookie
