The 12 Days of Christmas… COOKIES! Cut Outs

I thought I’d begin a new series leading up to Christmas! Lets begin with the  12 days of Christmas… Cookies!

Day One the traditional Cut Out Cookie. I have tried a few different online recipes and none are very good. There is nothing like my Mom’s cut out recipe. I have also tried a ton of different flours and the only one that seems works well with this is the Bob’s Red Mill All Purpose Flour.

ingredients:

2 ¾ cups Bob’s Red Mill Gluten Free flour

2 TSP baking powder

¼ tsp Salt

1 TSP Xanthan Gum

1 Cup Sweet Rice Flour*

¾ cup butter

1cup Sugar

2 eggs

1tsp Vanilla

*Sweet Rice Flour for dusting the countertop when rolling out cookies

Directions:

In a medium-sized bowl combine; flour, baking powder, salt, and xanthan gum. Sift to remove any lumps, set aside.

In a stand mixer or a hand mixer cream; butter, and sugar until light and fluffy. Add two eggs and vanilla. Mix until combined

Slowly add the flour mixture 1/2 cup at a time.

Chill for one hour or even over night!

Preheat oven to 400*(F)

Dust your board with Sweet Rice Flour

Roll out dough and cut with cookie cutters. Use a parchment lined cookie tray and bake 8-10 minutes. Until edges start to brown a little bit.

Frost with Icing.

1 Cup of powdered sugar, 3 TBS of water, 1/2 TSP vanilla and food coloring. Or you can use my buttercream frosting too!
